Ingredients
Wet
- 1 cup canned pumpkin puree
- 1 1/2 cups non-dairy milk (i used coconut)
- 2 Tbsp. pure maple syrup
- 2 Tbsp melted coconut oil
- 2 Tbsp. ground flax seed
- 1 1/4 cup oat flour, ground 1st
- 1/4 cup coconut flour
- 2 tsp. baking powder
- 2 tsp. pumpkin pie spice
- Preheat waffle iron and lightly spray with cooking spray
- Combine dry and wet ingredients in separate bowls
- Mix all together
- Pour in batches based upon waffle iron size
- Cook until crisp
- Top with what you like
