Oat Pumpkin Coconut (Flour) Waffles




Ingredients

Wet
  • 1 cup canned pumpkin puree
  • 1 1/2 cups non-dairy milk (i used coconut)
  • 2 Tbsp. pure maple syrup
  • 2 Tbsp melted coconut oil
  • 2 Tbsp. ground flax seed
Dry
  • 1 1/4 cup oat flour, ground 1st
  • 1/4 cup coconut flour
  • 2 tsp. baking powder
  • 2 tsp. pumpkin pie spice
Instructions
  1. Preheat waffle iron and lightly spray with cooking spray
  2. Combine dry and wet ingredients in separate bowls
  3. Mix all together
  4. Pour in batches based upon waffle iron size
  5. Cook until crisp
  6. Top with what you like
